Bean to Bar Process

The first and most important step in creating bean to bar chocolate is choosing the origins of the beans. Their quality is determined by their genetics and fermentation, and drying procedures. After dozens of tests conducted over 3 years, we chose 7 origins to start with. Previously harvested, fermented and dried at their origin, the cocoa beans arrive at the Livstory Chocolate Factory ready to be turned from raw beans into finished chocolate bars. This process is done by sorting, baking, crushing and shelling, grinding, refining, tempering and forming.
